Masala Dosa
Ingredients:
For making dosa batter you need:
- Rice 1 cup
- Urad dal 1/4 cup
- Soda bicarbonate a pinch
- Salt to taste
For making masala
- Medium size potatoes 2 boiled and peeled 2
- Onion sliced 1
- Tomato chopped 1
- Green chillies 4 chopped
- Garlic cloves 4 chopped
- Turmeric powder 1/2tsp
- Mustard seeds 1/2 tsp
- Curry leaves 4-5
- Fresh coriander leaves chopped
- Oil 2 tsp
- Salt to taste
For Red chilli chutney :
- Red chillies 8-10
- Few peanuts
- Lemon juice 1/2 tsp
- Ginger 1/2 tsp
- Garlic cloves 4
- Coconut grated 3 tsp
- Salt to taste
How to make :
- Soak the rice and dal separately for overnight.
- Next morning grind them to make a smooth paste and then mix together in a bowl.
- Add salt as per the taste, also add soda.
- Mix well and keep aside.
- In the grinder mix all the ingredients of making red chilli chutney, add little bit of water and grind to make a smooth chutney.
- Heat the oil in a pan and add curry leaves and mustard seeds.
- When the seeds stop crackling then green chillies and chopped garlic.
- Saute for few seconds and add slices of onion.
- Immediately add tomato, you are not suppose to cook onion until golden brown, it should be little transparent only.
- Now mash the boiled potatoes and add salt.
- Mix well and flavor the dosa bhaji with remaining spices and keep aside.
- Now heat a dosa tava, preferably non-stick.
- Apply few drops of vegetable oil.
- Spread a spoonful of dosa batter on heating tawa.
- Apply little bit of oil all over and simmer the gas.
- Leave to cook from inside as well.
- After 2 minutes, you will observe that dosa is turning into brown and crispy
- Finally place the bhaji in the center of dosa and flip to cover the bhaji in full dosa.
- Crispy and tasty dosa is ready to serve with red chuttney
