Masala Dosa

Ingredients:

For making dosa batter you need:

  1. Rice 1 cup
  2. Urad dal 1/4 cup
  3. Soda bicarbonate a pinch
  4. Salt to taste

For making masala

  1. Medium size potatoes 2 boiled and peeled 2
  2. Onion sliced 1
  3. Tomato chopped 1
  4. Green chillies 4 chopped
  5. Garlic cloves 4 chopped
  6. Turmeric powder 1/2tsp
  7. Mustard seeds 1/2 tsp
  8. Curry leaves 4-5
  9. Fresh coriander leaves chopped
  10. Oil 2 tsp
  11. Salt to taste

For Red chilli chutney :

  1. Red chillies 8-10
  2. Few peanuts
  3. Lemon juice 1/2 tsp
  4. Ginger 1/2 tsp
  5. Garlic  cloves 4
  6. Coconut grated 3 tsp
  7. Salt to taste

How to make :

  1. Soak the rice and dal separately for overnight.
  2. Next morning grind them to make a smooth paste and then mix together in a bowl.
  3. Add salt as per the taste, also add soda.
  4. Mix well and keep aside.
  5. In the grinder mix all the ingredients of making red chilli chutney, add little bit of water and grind to make a smooth chutney.
  6. Heat the oil in a pan and add curry leaves and mustard seeds.
  7. When the seeds stop crackling then green chillies and chopped garlic.
  8. Saute for few seconds and add slices of onion.
  9. Immediately add tomato, you are not suppose to cook onion until golden brown, it should be little transparent only.
  10. Now mash the boiled potatoes and add salt.
  11. Mix well and flavor the dosa bhaji with remaining spices and keep aside.
  12. Now heat a dosa tava, preferably non-stick.
  13. Apply few drops of vegetable oil.
  14. Spread a spoonful of dosa batter on heating tawa.
  15. Apply little bit of oil all over and simmer the gas.
  16. Leave to cook from inside as well.
  17. After 2 minutes, you will observe that dosa is turning into brown and crispy
  18. Finally place the bhaji in the center of dosa and flip to cover the bhaji in full dosa.
  19. Crispy and tasty dosa is ready to serve with red chuttney
